Tagine

Small clay earthenwares with a shallow, wide bottom and a conical top. It sits on top of clay, charcoal-fed stoves. This was tagine. By definition, tagine is a Maghrebi dish and the earthenware pot in which it is cooked (wikipedia).

The ride from Fes, Morocco to Marrakesh, Morocco was long and tiring. A little over five hours, in fact. There were several stops planned along the way for rest and relief. The stops were usually centered in petrol stations.

Now, in Morocco, according to our tour manager, a petrol station can be successful if it included some facilities. First, there has to be some petrol pumps. Second, there has to be a place for food. Third, there has to be a place to buy some needed basic items. Lastly, there has to be a good place for relief (toilets). The description was really familiar but, hey, we were after relief!

It was at the back of the petrol station that we saw the tagine, all lined up, in action, and ready to be served at a moment’s notice.
